Classic Baked Australian Lobster Tails
with Drawn Butter

Serves 2

Australian Lobster is the most expensive and some people say the most delicious of all lobsters. It is a cold water species that has snowy white, firm, sweet meat. The tails are the most prized part of this lobster-holics treat. Be sure to purchase your lobster tails from a reputable fish market to insure freshness.

2 Australian Lobster Tails -10-12 oz. each  
Pre-Heat Oven to 350 degrees F

Method

  1. Use a pair of kitchen scissors to make two parallel incisions down the underside of the opaque shell. Be careful not to cut through the entire tail since you will be utilizing it as a platform for baking the lobster tail.
  2. Remove the lobster tail from the shell and then place the meat back on top of the uncut side of the shell.
  3. Using a sharp knife, make a shallow cut down the center of the lobster tail and remove the vein from the meat.
  4. Butterfly the lobster meat open across the shell.
  5. Place the lobsters onto a baking sheet and bake in the preheated oven for 15-20 mins. or until the lobster is firm to the touch.  
  6. Remove from the oven and allow to cool for a few minutes before serving.

To Make Drawn Garlic Butter
˝ C. Unsalted Butter
1 Tbsp. Fresh Garlic finely chopped
˝ lemon juiced

Combine all of the ingredients in a sauce pan over low heat.  Allow the butter to heat and for the solids to rise to the top of the mixture. Remove solids from the butter and serve warmed alongside the lobster tails.

Serving Suggestion

This classic yet simple dish deserves to be served with equally elegant side dishes. Potatoes Gratin and French Buttered Green Beans are perfect.
