Clams or Mussels
Prepared Bordelaise Style

Preparing great seafood at home doesn’t get any easier or faster than this. Be sure that you start with the freshest seafood possible prepared from a trusted seafood market. This recipe is completely foolproof. Serve with a crisp green salad and some crusty garlic bread and you’ve got yourself a great meal in just a few minutes.

Serves 6

1/2 Cup Butter
2 Tblsp. Garlic, minced
1/2 Cup Clam Juice
1 Cup White Wine
2 Dozen Cherrystone Clams or Mussels (Prince Edward Island are great!)
¼ Cup Italian Flat Leaf Parsley, chopped
1 Cup Roma Tomatoes, Diced
Salt and Pepper To Taste

1. Melt the butter in a large, deep sauté pan.
2. Add the garlic and stir together over medium heat.
3. Pour in the clam juice and white wine and stir to incorporate.
4. Carefully add either your clams or mussels to the liquid
5 .Toss in the parsley and diced tomatoes.

Cover and allow to cook until all of the shells are open. Approx.5-6 mins.
7. Pour into a shallow bowl or serving dish and enjoy.

NOTE: If you don't feel like cooking at home, come on down to my restaurant and I will cook it for you.
