4 “Lobstermania”
Serves 4-6
Maine Lobster is a wildly popular
species found primarily in the Northern waters off the
Eastern Coast of the United States. At one time they
were so plentiful that they were used to fertilize
crops and were routinely fed to the slaves and field
workers to the point that they would beg not to have
to eat any more lobsters. It takes approximately seven
years for a lobster to mature to the size of one pound
so enjoy this treat whenever you can.
Ingredients
2 Cups Water
2 Cups of Clam Juice
2 Cups Chardonnay
4 pcs. Corn on the Cob cut in half
12 Cherrystone Clams
8 Red Skinned Potatoes cut into quarters
˝ Cup of Butter
2 each 1lb Maine Lobsters split in half, cleaned and
claws cracked
Method

Combine water, clam juice and wine into a large
stock pot over medium high heat.

Add
the corn, potatoes and butter to the pot. Cover and
allow to cook for 5 mins.

Add
the cherrystone clams and the lobsters to the pot
and stir together.

Cover and reduce heat to medium.

Cook
for 20 mins and serve.
To Serve
Pour the entire contents of the pot
into a large, deep serving bowl along with the broth.
Garnish with fresh lemon wedges and enjoy. |
