Italian Style Oven Roasted Shrimp Stuffed Lobster
with Basil Cream Sauce

Serves 2-4

The spiny lobster that hails from the coastal waters of California is easily identified by counting its’ legs. If there are 10 legs….it’s from California. This is a nice “date night” dinner. Serve it with some candle light and a bottle of chilled champagne.

Egg Wash Ingredients

2 Eggs beaten
1 T. Cream

Combine together in a shallow dish and set aside. 

Dredging Ingredients

1 Cup Flour
1 T. Garlic Powder
1 T. Prepared Italian Seasoning
¼ Cup Grated Parmesan Cheese

Combine together in a shallow dish and set aside. 

Ingredients

1 California Spiny Lobster, steamed, cleaned and split in half (ask your fishmonger to do this for you.)
½ Cup Garlic Infused Olive Oil
½ Cup Fresh Bay Shrimp
¼ Cup Garlic-herb Compound Butter

Method

Pre-Heat Oven to 350 degree F

  1. Fill the lower cavities of the lobster with the bay shrimp. Press them in tightly so they won’t fall out during the cooking process.
  2. With the meat side down, place the lobster halves first into the egg wash and then into the flour mixture.
  3. Heat a non stick sauté pan over medium high heat. Add the Garlic Olive oil to the pan and allow to heat.
  4. Place the floured side of the lobster face down into the sauté pan and cook for 3-5 mins. until golden.
  5. Remove lobster halves and put them on a baking sheet, cut side up.
  6. Top with Roasted Garlic Compound Butter and bake in the oven for 15-20 mins.

 

Italian Style Basil-Cream Sauce

Ingredients

½ C. Butter
1 T. Olive Oil
1 T. Garlic, chopped
½ C. Chardonnay
1 T. each- fresh basil, oregano and parsley finely chopped
¼ Cream
Juice of ½ lemon
Salt and Pepper To Taste

Method

  1. Heat the butter, olive oil and garlic over medium high heat. Do not allow garlic to brown.
  2. Add the chardonnay and allow the alcohol to cook off.
  3. Add the fresh herbs, salt and pepper and cream and allow to reduce by half in volume.
  4. Squeeze the lemon juice into the sauce. Stir in and allow the sauce to simmer until it has thickened to the desired consistency.

To Serve

Remove the lobster from the baking sheet and top with spoonfuls of the basil cream sauce.

This is a rich dish, so a fresh green salad is all you need to round out the meal.
