Salmon on Puff Pastry Appetizers
with Pesto Sauce

(serves 8)

Here, Chef Tene offers a simple, quick, delicious and impressive appetizer to serve your favorite dinner companion. Additionally, this dish would make a nice light luncheon alongside a lightly dressed organic green salad. This is what Coastal Cuisine is all about - versatility and convenience. You can make this in advance and just pop them into the oven when your guests arrive. Happy Cooking!

Pre Heat Oven to 350 degrees F

Pesto Sauce Ingredients

2 C Fresh Basil
˝ C Pine Nuts
1/3 C Grated Parmesan Cheese
Extra Virgin Olive Oil
Salt and Pepper to Taste

Method

  1. Put the basil, pine nuts and cheese into a food processor and pulse together until chopped.
  2. Slowly drizzle in enough olive oil while processing until the pesto reaches a thin paste consistency.
  3. Add salt and pepper to taste. Remove the blade from the processor and reserve in a small bowl at room temp until you are ready to serve.

Salmon on Puff Pastry Ingredients

8 thin slices of salmon cut into approx.
1 oz slices, cut on the diagonal of the fillet
1 Sheet of Puff Pastry, thawed according to package instructions, cut into 8 equal squares
2 Eggs beaten

Method

  1. Spray a baking sheet with non-stick cooking spray. Lay the 8 squares of puff pastry on the baking sheet and brush with beaten egg.
  2. Lay a slice of salmon diagonally across each piece of puff pastry.
  3. Bake in preheated oven for 15-20 mins. until golden brown.
  4. Remove from baking sheet and place on appetizer plates.
  5. Top each salmon squared with a spoonful of the pesto sauce. Garnish with fresh basil leaves and serve.
