#9 “Company’s Coming Salmon”
(serves 4)
In a jam and don’t know what to fix at
the last minute for company? Monterey Bay Salmon is
the perfect answer. Great for your heart and your
pocketbook, Salmon is easily located in almost every
grocery store. If Monterey Salmon is in season, give
it a try.
Spinach Mixture Ingredients
6 Slices of Applewood Smoked Bacon, cut
into 1” pieces
½ Medium White Onion, cut into small dice
2 C Fresh Spinach
Salt and Pepper To Taste
Method

Heat
a non-stick sauté pan over medium high heat.

Add
the bacon pieces to the pan and allow to cook until
crisp.

Add
the onions to the pan and cook until tender but not
browned.

Drain the bacon fat if desired.

Add
the spinach to the pan, cover and sweat until
spinach is tender.

Salt
and pepper to taste. Remove from the heat and
reserve for service.
Quick Pan Roasted Salmon Ingredients
4 ea. Salmon Fillets 6-8oz. apiece
¼ C Olive Oil
Salt and Pepper To Taste
Method

Heat
a non-stick sauté pan to medium high heat.

Add
the salmon fillets to the pan. Salt and Pepper each
side.

Cook
for 3-5 mins. per side until cooked to medium
doneness.

Remove from pan and allow to sit a couple of minutes
before serving.
To Serve
Place a large serving spoonful of the
spinach-bacon-onion mixture in the center of each
serving plate. Top with a piece of salmon and garnish
with lemon wedges. |
