Seafood Quiche

(Serves 6)

1 unbaked pie shell
1 lb. fresh or frozen shrimp, peeled & deveined
3 eggs
1 c. half & half
1 c. grated Swiss cheese
1/2 tsp. salt
1 tsp. pepper
3/4 c. onion, chopped
2 Tbsp. butter

Method

1. Cook shrimp and drain.
2. Mix eggs, cream, cheese, salt and pepper.
3. Saute onions in butter until soft.
4. Add to egg mixture along with shrimp.
5. Pour into pie shell.
6. Bake at 350 degrees for 40-45 minutes.

NOTE:  I use half fresh or frozen shrimp and the rest canned crab.

NOTE: If you don't feel like cooking at home, come on down to my restaurant and I will cook it for you.
